July’s Recipe – Vegetarian Cabbage Roll Casserole

Vegetarian Cabbage Roll Casserole
Ingredients:
1/2 small head cabbage, par boiled
1 can well rinsed beans
3 cloves garlic diced or 2tsp garlic powder
I large onion diced
1 large green pepper diced
1/2tsp salt & 1/2tsp pepper
4 cups cooked rice
1 large can diced tomatoes or 6 fresh tomatoes diced
1 can tomatoe sauce
Directions:
Cook rice according to package instructions
Chop cabbage into smaller bite size pieces and par boil for 5 minutes
Rinse cabbage and place in large bowl
Dice onion and peppers, add to cabbage
Add remaining ingredients, mix together well and pour into large casserole dish.
Cover and bake at 350 degrees for 45 minutes.
