July’s Recipe – Vegetarian Cabbage Roll Casserole

Vegetarian Cabbage Roll Casserole

Ingredients:

1/2 small head cabbage, par boiled

1 can well rinsed beans

3 cloves garlic diced or 2tsp garlic powder

I large onion diced

1 large green pepper diced

1/2tsp salt & 1/2tsp pepper

4 cups cooked rice

1 large can diced tomatoes or 6 fresh tomatoes diced

1 can tomatoe sauce

Directions:

Cook rice according to package instructions

Chop cabbage into smaller bite size pieces and par boil for 5 minutes

Rinse cabbage and place in large bowl

Dice onion and peppers, add to cabbage

Add remaining ingredients, mix together well and pour into large casserole dish.

Cover and bake at 350 degrees for 45 minutes.

You could eat this chicken-and-vegetable soup with a knife and fork, but don’t forget a spoon for the delicious broth. It’s made with chicken pieces on the bone.

Microwave Oatmeal Squares

These squares make a fast, easy and healthy snack. For extra flavour, add dried cranberries, raisins, or even mini-chocolate chips. Mix crumbs left in the pan with yogurt and use and use as a topping over fruit. (more…)
